Since 2018, the focus during the expansion of the WSU has been on our Mineral Water “Sensory Assessment Reports” for mineral water bottlers. According to an IPSOS and FORSA survey, taste is the decisive selling point for 64% of natural mineral water consumers.

No mineral water tastes like another!

The taste of a mineral water depends on the types of rock layers it flows through and which minerals it has absorbed. Due to the varying nature of rock layers in different regions, each mineral water thus possesses its own individual mineral composition and as a result its own unique sensory qualities.

Sensory Assessment Certificate Water Sommelier Union This fact alone is reason enough for all mineral water bottlers to have their own mineral water comprehensively assessed and documented. Commercial differentiation in mineral waters based on natural ingredients is still a rare occurrence in the industry. Reference is often made to geographical origin and/or historical aspects, but it is precisely the differences in mineralisation and the resulting sensory taste impressions that offer a wealth of compelling positioning and marketing opportunities.

Valuable assistance for this is provided by the Sensory Assessment Working Group of the Water Sommelier Union, which, on request, prepares a detailed expert report for mineral water bottlers, which can be used in communication with the customer, whether on the labels or on the company’s website. This report includes, inter alia, a characterisation of total mineralisation, nutritional classification, a detailed sensory description and suitability for pairing with other beverages such as wine and coffee as well as with specific meals.

Each mineral water receives the “WSU-mark” as well as a certificate. The use of the assessment report, the certificate and the mark is governed by a standard licensing agreement.
